ingredients

2 tablespoons vegetable oil
1 1/2 pound pork steak, cut into 1-inch cubes, fat trimmed
salt and freshly ground black pepper, to taste
2 stalks celery, cut diagonally into 1-inch pieces
1/2 cup chopped yellow onion
1/2 green bell pepper, seeded and cut into 1-inch pieces
2 tablespoons cornstarch
1/3 cup water
2 1/2 tablespoons soy sauce
2 tablespoons cider vinegar
1 can (8 ounce size) pineapple chunks, undrained

directions

Preheat oven to 350 degrees F.

Heat a large skillet over medium-high heat. Add half the oil. When hot, add the pork and stir to brown on all sides. Season the pork with salt and pepper to taste then place in a 2 1/2 quart greased casserole dish.

Add the remaining oil to the skillet and add the celery, onion, and bell pepper. Cook, stirring, over medium heat until soft, about 5 minutes. Add the sauteed vegetables to the casserole dish.

In a bowl, combine the cornstarch and water until smooth.

Add the soy sauce, vinegar, and pineapple to the skillet. Stir in the cornstarch mixture and cook, stirring, until thickened.

Pour the pineapple mixture evenly over the meat and vegetables in the casserole. Stir gently to combine.

Place in the oven and bake, uncovered for 45 minutes or until cooked through.

A great dish, this recipe was simple and easy to prepare. If I could make one suggestion; It would be to velveting the pork. I know it not stir-fry, but the technique works for cubed meats.

Delish! For the person who thought the sauce was starchy, maybe you didn't cook it long enough. The starchy flavor cooks out so let that sauce simmer a good while. The pork was super tender and it had just the right amount of zing to the flavor with the vinegar and pineapple.

This was okay, the sauce was a little too starchy for my taste, would like to make it thinner next time. Not very strong flavors, would make it again with lots of adjustments.
